Every Saturday, without fail, a bunch of perfectly ripe bananas sits on our counter, just waiting to be transformed into something delicious. Normally, I’d whip up my go-to Cottage Cheese Banana Bread, but with a hectic week ahead, I needed a quick, energizing snack. Enter these Banana Bread Energy + Fiber Balls—packed with protein, fiber, and complex carbs to keep you fueled and satisfied. They’re bite-sized, delicious, and perfect for busy days. Enjoy!
Banana Bread Energy + Fiber Balls
Ingredients:
1/2 cup mashed ripe banana
2 cups gluten free oats
1/2 cut pitted dates (approximately 5-6)
1/4 cup nut butter (I used Pistachio butter but almond, peanut and cashew work well too)
1 scoop vanilla protein powder
1/3 cup whole psyllium husks
1/4 cup chia seeds
2 tsp royal cinnamon
1/3 cup water (or more if needed)
Directions:
- In a food processor, add all ingredients. Plus until the ingredients are evenly blended.
- Slowly add water to the food processor until the mixture forms a dough like consistency.
- Roll into balls. Approximately 12 balls depending on the size.
- Eat immediately or store in an air tight container in the refrigerator.
