High-Protein Soft Scrambled Eggs w/ Cottage Cheese

High-Protein Soft Scrambled eggs with Cottage Cheese

(38 grams of protein) 

4 large eggs

1/2 cup low-fat cottage cheese

Salt & Pepper, to taste

Thin sliced green onion, whites and greens

Dash of olive oil or ghee

Dash of chili crisp (optional)

Directions:

1. Whisk the eggs, cottage cheese, salt and pepper with a fork.

2. Heat a deep saucepan on medium.

3. Add a dash of olive oil and the whites of the green onion. Add the egg mixture.

4. Using a rubber spatula, stir constantly, by folding and scraping the bottom of the pan.

5. Eggs are done when they’re soft and slightly wet, but cooked all the way through.

6. Top with green onions and chili crisp and serve immediately with a side of toast.
