When I posted this recipe on instagram it was saved thousands of times! So heres's the full recipe for you to keep coming back to.
Ingredients:
1 cup smooth peanut butter (Once Again peanut butter works great because it’s runny)
1/4 cup pumpkin puree
1/4 cup honey
2 tbsp coconut flour
2 tbsp almond flour
2 scoops vanilla protein powder (Form Nutrition performance protein is my go-to)
1 tbsp royal cinnamon (Burlap & Barrel makes a great one and you can sub for pumpkin pie spice also)
1 cup of dark chocolate chips (Ghiradelli extra dark dairy free chocolate chips)
Pinch of flaky salt (Maldon Salt always)
Directions:
[1] Mix all ingredients into a bowl and add extra pumpkin if it’s too dry and more flour or protein powder if it’s too loose and can’t form a dough.
[2] Scoop into balls and roll them into balls. I like them on the bigger side so I use a medium sized melon ball scooper to keep them consistent in size. Freeze them for a little bit to make it easier to roll in the chocolate. (I forgot this step and it still works)
[3] Melt 1 cup dark chocolate chips with 1 tbsp of coconut oil (avocado oil works too) in the microwave. Heat in intervals so you don’t let it burn.
[4] Coat the balls in the melted chocolate and place them on parchment paper. Sprinkle with flaky salt.
[5] Put them back into the freezer for a little bit to harden again and enjoy this protein packed snack!
