What I love about this recipe:
I recently got an air-fryer after years of resisting the urge to purchase yet another appliance for our kitchen. But I have to admit, it was worth every penny. There’s just something about small batch cooking that makes it easier for me to try out new recipes and ingredients (like the random veggies at the farmer’s markets).. And not to mention, the air fryer takes little to no time to preheat and clean up unlike its sister, the oven. Plug over and now onto the beets!
I love beets but my kids have shunned them in the past so I stopped making them entirely. But not anymore! This recipe is so simple and delicious that even the biggest beet skeptics will have a change of heart.
Beets offer a great source of fiber, vitamins and minerals (like potassium) whereas the labneh offers a great source of protein, calcium and probiotics. In other words, this dish is great for your digestion and the gut!
Ingredients:
Beets:
- 3 cups Fresh Golden Beets, peeled and sliced into wedges
- 1 tbsp Extra virgin olive oil
- ½ tsp Salt
- ½ tsp Garlic Powder
- ¼ tsp Paprika
- Pepper (to taste)
Garlic Labneh:
- 1 cup Labneh (or Greek Yogurt)
- 4 tsp salt
- 2-3 garlic cloves, minced
- 1 tbsp olive oil
- Herbs like dill, mint, cilantro etc. (optional)
Directions:
- Mix all the Labneh ingredients together, drizzle with olive oil, and set aside.
- Add the beets, olive oil, salt, garlic powder, paprika and pepper to a bowl and toss thoroughly.
- Place the beets in an air fryer basket and air fry at 400 degrees for 18-20 minutes (or longer if you like them crispy). Toss the basket a few times during cooking as well.
- Eat immediately.
