Healthy Hemp Seed Cookies

What I love about this recipe: 

I personally love a healthy cookie because you can eat them for breakfast without spiraling into an all day glucose spike. This cookie is packed with heart and brain boosting hemp seeds that are rich in fiber and protein to keep you satiated, fueled and energized during snack time. And, they are delicious enough to satisfy your sweet tooth.

Even the kids approved of this recipe!

 

Ingredients:

  • ½ cup Medjool Dates
  • ¼  cup Maple Syrup (or sub for another ½ cup Medjool Dates)
  • ½ cup Peanut Butter
  • 1 ½ tsp Vanilla extract
  • ½ tsp Baking powder
  • ¼ tsp salt
  • 3-4 tbsp Plant Milk (Almond, Oat, Pistachio)
  • 1 cup Oat flour (or sub for Almond flour)
  • ½ cup Hemp Seeds (plus more to sprinkle on top)
  • ½ cup Chocolate Chips (optional but necessary)

Instructions:

  1. Preheat the oven to 325 degrees. Line a baking sheet with parchment paper or a silicone baking mat. 
  2. In a food processor, add dates, maple syrup, peanut butter, milk, oat flour, vanilla, salt and baking powder. Process until a dough forms. Add more milk if the dough is too dry. 
  3. Add hemp seeds and pulse to combine.
  4. Fold in chocolate chips.
  5. Make cookie dough balls and place them on the baking sheet (the don’t expand so you won’t need to space them out)
  6. Press down each ball to flatten. I love to add a couple more chocolate chips on top and sprinkle with hemp seeds before baking.
  7. Bake for 12 minutes. They are great straight from the oven or at room temperature.
