If you’ve followed my stories on Instagram, you’ll probably recognize the look of this delicious salad. It’s a recreation of my favorite to-go order from a local café, Ciao Gloria - the Insalata Mista with Jammy Eggs! Now this is a seasonal salad, and not offered year-round (sad), which is why I’m extra excited to share my version of the recipe so you all can DIY from home. Insalata Mista with Jammy Eggs
Ingredients:
2 Jammy Eggs (7 min in boiling water, then straight into an ice bath)
Fresh Express Sweet & Crunchy Salad Blend (or any crunchy salad blend you prefer)
Shredded Smoked Gouda Cheese
Red Grapes, Halved
Green Onions, sliced whites and greens
Slivered Almonds
Roasted Celery Root (chopped into 1 inch cubes, sprinkled with olive oil & salt, bake for ~20 min at 425 degrees)
Dressing (to taste):
1/3 cup Olive Oil
1/4 cup Apple Cider Vinegar
1 Tbsp Honey (or Maple Syrup)
1 Tbsp wholegrain mustard
1/2 Tsp Salt
1/4 Tsp Pepper
Load it all up and enjoy immediately!
